Drink #10: Out Of Thyme

Way back in the blog entitled The Constant War, I mentioned the strengths of a gin and tonic made with thyme. Well, this week I thought a lot about those long green vines hanging down that big wall. And thyme with gin is too good to miss.  

This drink suits warmer evenings, so you may want to wait until the spring before cracking this one out. That said, maybe parnsiphead power means you whack the heating on all year round. In which case, toast your success, and never use lemon with gin again.

Receptacle: 

Stem glass 

Ingredients:

50ml wild berry gin 

Tonic

A good handful of thyme 

Angostura Bitters 

Ice

Recipe: 

Add ice to the highball ,and pour in the gin. Top up with tonic, and sprinkle a few drops of bitters. Add a good handful of thyme, so the stems nest in the glass, and poke out the top of the liquid. This should allow for a gorgeous whiff of thyme with every sip.
